Big things to come

All this waiting is really starting to get to us.  We have so many ideas...we're making some great new beers in the bear cave.  It's like we have a green thumb for beer.  Everything we make turns out awesome.  Just can't get it to everyone. 

Luckily this weekend something finally came together...we have a big opportunity coming possibly.  Can't wait, literally.  Keep making tap handles in the meantime all the while wondering when we get to use them, besides on the side of my fridge which is awesome looking by the way.  I have a picture on my phone actually....


Mind the mess..There's 2 taps now though.  Have the ESB and Dunkel on deck.  Let's see what's new...Licensed in Huntsville officially as of yesterday.  That leaves our ABC license left.  We're planning on a 8 ft tall wooden bear outside our building on the Square downtown.  Don't know what the city is going say about that....it'll happen though.

Tap Handles

Check out these bad boys.  Have you ever gone to a bar, sat down and looked at the spread, and was like, I can't tell what's what?  Well, not with Old Black Bear.


This is our ESB handle.  You'll be able to tell it from across the room by the Orange mirrored emblem at the bottom.  We started production on these this week after months of prototypes.  Don't have the money to purchase them custom and really don't like the stock handles you get.  We wanted to be unique just like our beer.



A little black paint, vinyl lettering, and a laquer dip and we hung em up to dry. 



These are going to look good!!!

Small Setback

So things don't always happen the way you plan it...So far, with Old Black Bear, nothing is going to plan, except the beer we make.  If we could only get it to the market.  Just when we think everything is going perfect, Olde Towne decides to close up shop, leaving us with no brewery.  I realize it's just business, but Damn, what horrible timing.  You talk about a depressing couple of days Monday and Tuesday.  To think that we were | | that close to brewing beer and planning the debut, then 1 weekend and all our ideas were turned around bassackwards. 

We didn't letting it stop us though, and we now have 2 other breweries in the works to help us get our beer into the Huntsville market.  We'll let you know who that is when we get the contract signed.  Don't think we will make our April debut timeline, but we might be able to make May or June.  Which will be good, it will be warmer and we can take advantage of the outdoors. 

Once again stay tuned, we'll get there eventually.

Making Progress

Still on track for a debut party sometime in March or early April.  Would like for it to be a little warmer so we can take advantage of the outdoors.  It seems sometimes that every step we take we get set back 2, but contrary to how it feels, we are actually making progress.  We now have our Federal Tax Id, Madison County Business license, Huntsville City Priviledge license is in process, ABC board application is in process, TTB license is in Process, we learned today that we need to edit our lease, edit our contract with Olde Towne, and that we need to apply for an Alabama Sales Tax Id.  We now have an office downtown on the square in Huntsville, and all I keep thinking is...We just want to make beer.  It's no wonder why our economy is in such bad shape.  Don't want to get negative though, because our second batch of Old Bear Porter is complete and is Awesome!  Can't wait to get it out there for you guys to try.

Stay tuned, we'll keep you posted on what happens in the next month.  Should be cooking by the end of the month.

Recipe for Bacon Explosion Deer Backstrap

Here's a recipe I got from a good friend of mine in College, Patrick Black.  We both went to the University of TN at Martin...Go Skyhawks!!  I would always ask him what was in his marinade and he always told me none of your business, but he had it posted on his refrigerator so when I would stop by, I would write it down a few ingredients at a time.  I guess if you think about it, it could be construde as stealing, but my mom always told me to share and she would have told him the same thing.  Bet you can't get my mom to give up her yeast roll recipe though.  But I digress...Not really a big fan of deer meat myself but I have to admit, this marinade really did the trick.  You should start by soaking your meat in salt water over night to draw what blood you can from it.  That will help remove the gamey taste some.  Next mix these ingredients together in a bowl.  This is a mans recipe so there's no mixing in separate bowls and what not.  Just throw it all in a big bowl and beat it into submission. 

3-4 sticks of butter
1 tsp Garlic Powder
Salt & Pepper ( however much you like )
3-5 Tbsp Worchestershire Sauce
3-5 Tbsp Soy Sauce
3/4 Cup Lemon Juice
1 Tbsp Liquid Smoke

Myself, I throw in a handful of Brown Sugar as well

Once that is all mixed pour it over your meat and set in the refrigerator for 8-12 hours turning every 4-6 hours.
When this is done the butter will have set up and turned kind of hard.  It doesn't look too pleasant but it tastes great.  You'll see a picture in a minute.

Now for the bacon,  lay out 8 pieces of bacon side by side with each piece touching the next.  Peel every other piece back until there is about the width of one of your pieces of bacon left at the end.  You should have 4 laying flat and 4 peeled back. Now lay a piece across the 4 left laying flat at the bends of the 4 you peeled back.  fold the 4 pieces back down and peel the opposite 4 back.  You repeat this process until you have something that looks like this.

 
Now for me, my back strap is pretty long ( from a pretty big deer ), so I have to repeat this process again to make 2 of these.  Here it is in action...

Just for fun, here's the picture with the meat in the marinade...


All that's left to do is lay out your deer meat and roll it up...


Set your Big Green Egg up for indirect cooking at 225 degrees and cook it for 5 hours or so.  They say 1 hour for every inch thick the meat is. I have a pan of apple juice underneath to help keep it moist.

Approval

Got a call from the ABC lawyer today.  We have a green light to go forward with our business plan with Olde Towne.  Really good news for us for the future.  This will make the transition from contracting to our own brewery very easy in the near future.  Also tasted our pilot ESB tonight and first opinions from everyone were really good.  Can't wait to get this out into the community.

Creating a Legend

Old Black Bear Brewing Company LLC is here

It all starts this week my friends.  Soon you will be able to enjoy some of our favorite brews.  Man this has been quite an adventure.  There are some pretty screwed up individuals in this business.  People that don't know what they are doing to people that should know what they are doing but still don't.  There are a few guys that really helped us out.  We fought through it though and will be selling beer come January hopefully.  We'll keep you posted with the latest news.
